Not Just Beans


Thank God for dirty dishes,
They have a tale to tell.
While others may go hungry, We are eating well.
With home, health and happiness, I shouldn't want to fuss.
By the stack of evidence,
God's been very good to us.


Yellow Cake

2 1/4 cups flour
1 1/2 cups sugar
3 1/2 tsp. baking powder
1 tsp. salt
1 1/4 cups milk
1/2 cup shortening or 1/4 shortening and 1/4 margarine or butter softened
1 tsp. vanilla
3 eggs
Beat all ingredients together in a bowl until smooth, scraping the sides constantly. Pour into 1 well greased and floured 9x13 inch pan or three 8-inch or two 9-inch pans. Bake at 350 degrees for the times listed below.
9x13-inch 40-45 minutes
9-inch pan 30-35 minutes
8-inch pan 23-28 minutes
cupcakes 20-25 minutes
Cake is done when a toothpick inserted into the center comes out clean. Cool completely, then frost.

Apple Crisp

6 apples, peeled and sliced
1 cup brown sugar
1/2 cup oatmeal
1/2 cup flour
1/2 cup butter or margarine,
softened
1 tsp. cinnamon and/or nutmeg
1/4 cup water
Preheat oven to 350 degrees. Arrange apples in well-greased baking dish. Blend all remaining ingredients except water. Spread evenly over top of apples. Pour water over the topping. Bake 45 minutes until apples are tender and top is crisp. Makes 6 servings.

Pumpkin Bread

1 1/2 cups sugar
2 eggs, slightly beaten
1/2 cup oil
1 cup pumpkin
1 3/4 cups flour
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1/4 tsp. allspice
1/3 cup water
1/2 cup raisins (optional)
Mix sugar, eggs, oil and pumpkin in a bowl. Add dry ingredients and water in order given. Mix well. Stir in nuts and raisins if desired. Pour into a greased and floured loaf pan and bake at 350 degrees for 1 hour or longer if needed. To test doneness put a knife in the center of the bread. If it comes out clean it is finished. Serve with Honey Butter.


Shepherd's Pie

1/2 lb. ground beef
1 onion, chopped
2 carrots, diced
1 can peas, drained or
   1 can mixed vegetables for carrots and peas
1 (15 oz.) can tomato sauce
salt and pepper (to taste)
1 tsp. sugar
2 tsp. onion powder
1 tsp. garlic powder
1 tsp. chili powder
4 cups mashed potatoes
3/4 cup grated cheddar cheese

Brown ground beef and onion. Add carrots and cook until tender. Drain grease and add peas. In a casserole dish, combine tomato sauce, salt, pepper, sugar onion powder, garlic powder and chili powder. Mix well and add the beef mixture. Mix again thoroughly. Top with mashed potatoes and then grated cheese. Bake in the oven uncovered at 350 degrees for 15 minutes or until the cheese melts.


Dinner Rolls

3 heaping Tbsp. shortening
1 Tbsp. salt
Scant 1/2 cup sugar
1 cup hot water
6 cups flour
1 cup warm water (110 - 115 degrees)
2 pkgs. or 2 Tbsp. yeast
Combine shortening, salt, and sugar in large bowl. Pour hot water over misture and stir until shortening melts. Add enough flour to make a paste. Add 1 cup warm water in which yeast has been dissolved. Mix in remaining flour to form a soft dough. Knead dough well. Place in a bowl and cover with a damp towel; let rise. Punch dough down when doubled and roll to 1/2 inch thickness. Cut with cookie cutter and place on greased pans about 1/2 inch apart. Let rise until doubled. Bake at 400 degrees for 20 minutes or until golden brown. Makes 3 dozen.
